There is nothing that warms your innards and your soul more than a delicious bowl of chili. Traditional Texas chili has no beans in it. I’m not one to follow rules so like the honey badger, I’ll do what I want (and add beans). The protein used is entirely up to the cook. I used deer for this one, but occasionally I love a good sirloin chili too.

Ingredients:

2 (15.5 oz) cans of Chili Beans. NOT CHILI, Not chili and beans
1 (15.5 oz) can of kidney beans
2 (28oz) cans of DICED TOMATOES
2 small cans of diced green chilies (NOT jalapenos)
2’ish tablespoons of chili powder
1’ish tablespoon of liquid smoke
1’ish tablespoon of cumin
½ cup brown sugar
Add salt pepper, garlic salt to taste
Method

Combine everything into a crock-pot.

Cook on high for 30 minutes.

Dice 2 yellow onions, cut and fry until brown. Cook Garlic 2-4 cloves with onions.

If you use beef, deer, pork or lamb (cube/chunk), cook with some garlic salt and oil. Slightly undercook them (rare/medium rare).

Cover and cook everything together for about 1.5 hours on medium or 2 hours on low. 20 minutes before you are ready to eat, add a couple tablespoons of flour and stir it in.

In this installment of Cooking with Tim (brought to you by Middle Easy.com), Tim does both. What an insanely efficient multi-tasker. He’s like the Swiss Army knife of MMA.

As I was finishing up my last workout of the day craving carbs, and salt I couldn’t help contemplating how I could make some traditional Italian recipes spicier and add more alcohol (two things I brood on almost as much as wishing the zombie apocalypse would begin). Just the fact that two of the ingredients are vodka, and prosciutto should be reason enough to try this.

Not everyone can put away 6000 calories in a day, and its even more challenging to make those 6k actually taste decent. I have been searching for a purpose to my life for years… The higher calling of creating recipes, punching people in the face, and shooting things have at last brought peace and tranquility to my life. Stay angry my friends.

Ingredients

1 cup vodka
1 tablespoon crushed red pepper
3 tablespoons olive oil
3/4 pound prosciutto, chopped
1 large clove garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
salt and pepper to taste
1 (16 ounce) can chopped tomatoes, with juice
1 (16 ounce) cans tomato sauce
1 cup heavy whipping cream

Method

In a small bowl, combine vodka and red pepper flakes. Set aside for 1 hour.

Heat olive oil in a large skillet over medium heat. Sautee prosciutto, garlic, parsley, basil, salt and pepper until prosciutto and garlic are evenly brown.

Pour in vodka mixture, and simmer 10 minutes. Add tomatoes, and stir in with can of tomato sauce. Simmer 15 minutes. Stir in 1 cup heavy cream, and cook 4 minutes.

I put the sauce over gnocchi and sautéed chicken.

From our friends at Middle Easy.com (full article here):

As we are cutting weight getting ready for a fight we limit our calories. This is a big issue with allot of fighters. They end up eating the same thing every night. Chicken one night, and fish the next get kind of boring.

Just because you have you loose 30lbs in a month doesn’t mean that you can’t do it with style. From BBQ chicken sandwiches, turkey bacon BLT’s, to Shrimp Ceviche a little bit of imagination can to a long way with a starving MMA fighter.

Ingredients:

1 pounds of uncooked shrimp
1 large red onion
3 medium tomatoes
2 fresh squeezed oranges
2 fresh squeezed lemons
2 fresh squeezed limes
3 tablespoons of ketchup
1 tablespoon horse radish
2 jalapenos
1/2 bushel of fresh chopped cilantro
1/2 cup of your favorite salsa
1 tablespoon garlic salt
Pepper to taste
Ingredients

Boil water with salt and pepper in a pan. After it boils, add shrimp. Let it boil for 3 minutes (or until shrimp becomes lightly red) and remove from heat, drain, and place shrimp in the refrigerator.

Mince the onion and jalapenos.

Cube the tomatoes into small squares.

In a large bowl, mix the onion, tomatoes, jalapenos, orange, lime and lemon juice, ketchup, horse radish cilantro, garlic salt and pepper. Once the shrimp has cooled, add shrimp and mix.

Let sit for about 30 minutes in the fridge

Serve with crackers, and cerveza (if you are not cutting). Use it as an appetizer, or eat it out of a bowl with a spoon.
